UPSIDE
Chicken
Flavorful and delicious. Best prepared to good music, it pairs exceptionally well with your family and friends. And a glass of Sauvignon Blanc.
Ingredients
Cell-cultivated chicken, Maltodextrin, Transglutaminase (Binding Agent). Grown directly from real chicken cells, our product contains more than 99% cultivated chicken!
We're incredibly proud that our cultivated chicken is made from over 99% cultivated chicken cells, resulting in a delicious, mouth-watering product. The remaining <1% are food ingredients that are used to hold the cells together (it’s often used in meatballs for the same purpose).
Maltodextrin is a common food ingredient that can be made from a variety of starches like corn, wheat, rice, and tapioca. We use it for more effective mixing of our transglutaminase enzyme into the meat.
Transglutaminase is an enzyme that is often used in food production to bind proteins together. In conventional meat it’s frequently used in things like meatballs to keep them from crumbling.
Still curious?
Yes! It is commonly used in other food products, and has been established as safe by various regulatory agencies, including the U.S. Food and Drug Administration (FDA) and has been evaluated by USDA for suitability for consumption. This ingredient has a long history of safe use and consumption, and is found in many animal meats.
We can certainly imagine a world where cultivated meat could carry the organic seal, but right now we are focused on bringing our products to consumers for the first time. Because of the complexities involve, we have not yet applied for an “organic” certification.
Our first restaurant partner will be Bar Crenn in San Francisco. Bar Crenn, from Chef Dominique Crenn (the only three-Michelin Starred female chef in the US) will showcase our premier product, the UPSIDE chicken filet. As our production ramps up so will the number of outlets selling UPSIDE!
