Chicken Filet Concept
The chicken that started it all. Our first Chicken Filet concept made history as the first cultivated meat product green-lit by both the FDA and USDA for sale in the U.S. Made from nearly 100% cultivated chicken, the Filet was available for sale in 2023 for a limited time.
Chicken Filet Ingredients
Cell cultivated chicken, Maltodextrin, Transglutaminase (Binding Agent). Grown directly from real chicken cells, our product contains more than 99% cultivated chicken!
We're incredibly proud that our cultivated Chicken Filet is made from over 99% cultivated chicken cells, resulting in a delicious, mouth-watering product. The remaining <1% are food ingredients that are used to hold the cells together (it’s often used in meatballs for the same purpose).
Maltodextrin is a common food ingredient that can be made from a variety of starches like corn, wheat, rice, and tapioca. We use it for more effective mixing.
Transglutaminase is an enzyme that is commonly used in food production to bind proteins together. In conventional meat it’s frequently used in things like meatballs to keep them from crumbling.
Still curious?
No, it is not currently available for sale. In 2023, it was available for sale at Bar Crenn in San Francisco for a limited time.
Yes! It is commonly used in other food products, and has been established as safe by various regulatory agencies, including the U.S. Food and Drug Administration (FDA) and has been evaluated by USDA for suitability for consumption. This ingredient has a long history of safe use and consumption, and is found in many animal meats.
We can certainly imagine a world where cultivated meat could carry the organic seal, but right now we are focused on bringing our products to consumers for the first time. Because of the complexities involve, we have not yet applied for an “organic” certification.
